prefer "- From " instead of ">From "??

Implementation note:
For implementations which emit out-of-spec workarounds
to forestall mangling of "From " in transit, it has been
pointed out that stuffing "From " with "- " safely masks
the offending sequence.  On the receiving end, the stuffed
line automatically reverts cleanly to the original text,
without any special handling.

This may be the sanest way to handle that case.
