You have a faulty assumption: that the subscriber knows how the
messages from the list will be sent. I have subscribed to a number of
mailing lists, and they invariably reconfigure without telling the
subscribers. When that happens, all of the client configuration that
you are talking about breaks badly and has to be redone. Yes, there is
usually a temporary hack, but that is quite far from having "a mail
reader that is aware of whether or not a message came from a mailing
list."
